my (JB’s) younger sister, pamela, fed me this yummy chick pea salad once when i was visiting her in CA. ever since then, i’ve been making this to use in sandwiches, on crackers, etc., except i don’t have the *official* recipe, and just kind of make it up as i go along. here is (roughly) what i do:
drain and rinse two cans of garbanzo beans, then pour them into a bowl and mash them up real good. i use a potato masher to mash my beans, but people with fancy kitchen gadgets could use a food processor. shoot for a consistency that’s kind of lumpy so that it all sticks together, but you can still see some whole beans in there.
then, stir in some mayonnaise and sweet pickle relish (to taste). i usually use two large tablespoons of mayo and one large tablespoon of relish, but this isn’t SCIENCE folks… just add as much as you want, and mix it all together.
then, toss in some chopped celery, and even some chopped red onion if you feel like it. mix it all together.
