With you having stated that you are a Texan, I can almost feel your longing coming through the page for breakfast tacos.
Being a former resident of Austin, one of the only things that I truly miss about Texas is the breakfast tacos. It’s a thing of place and spirit. I just don’t think that anyone who’s never lived off of them can appreciated the simple beauty of a well crafted pile of meat, tortillas, and eggs. Many will try to replicate them, most will fail.
Breakfast tacos ARE awesome.
If I could find the perfect Tex/Mex restaurant with breakfast tacos, migas, tortas, etc. I’d…I’d, well, I don’t know exactly what I’d do except be deliriously happy.
