OK, now that the election’s over, I can once again turn my attention to the non-political portions of the web. I’ve started writing up the individual posts/reviews for the winners of the 2008 Reader’s Poll and you should see those start going up soon.

In the meantime - the gift-giving season is just around the corner. If you’re planning on buying some books as gifts consider starting at one of the Amazon links to your right. It won’t cost you anything extra and Amazon will cut me in on the sell. This blog empire made me $3 in October, and with your help I can double that in November!

Enchilada Sauce

As I started making my enchilada sauce, I decided that this is a good recipe to share.  It is probably the most basic Mexican sauce.  It’s also inexpensive, and is great with lots of Mexican dishes, canned sauce doesn’t compare.  

You can double this recipe.  Leftover sauce freezes well.

6  large dried red chilies

1 quart boiling water

7-10 peeled garlic cloves  ( about 1/4 cup)

salt to taste

3 Tablespoons flour

  Rinse the chilies in cold water and remove the stems.  Cook in boiling water along with the garlic.  Remove the chiles and garlic after about 15 minutes ( when tender).  Place in a blender or food processor with some reserved liquid, I make it into a soupy paste.  1/2 to 1 cup of the liquid should do it.  You may need to do this in batches.  Whip the flour in towards the end.  As the sauce cooks with your food it will thicken.
